摘  要:以槐米、柠檬为原料,绵白糖、柠檬酸钠为辅料,研制出一种酸甜适中、口味清香的新型槐米柠檬饮料。以槐米柠檬饮料的质量品质为考查指标,通过单因素试验和正交试验得出该产品的最佳配方为槐米提取液添加量15%,柠檬汁添加量10%,绵白糖添加量8%,柠檬酸钠添加量0.03%。此配方可制得一款色泽鲜黄明亮、口感细腻、甜中带酸、滋味可口的优质健康饮料。Flos sophorae and lemon were used as raw materials,cotton sugar and sodium citrate were used as ingredients.A kind of beverage with moderate sweetness and mild taste was developed.The quality index of the beverage was tested,the best formula of the beverage was obtained through single tests and orthogonal tests.the flos sophorae extract was 15%,the amount of lemon juice was 10%,sugar was 8%,and the sodium citrate was 0.03%.This formula could produce a bright yellow color,delicate taste,sweet and sour,delicious taste of high-quality healthful dbeverage.
