摘  要:目的:对一款在发酵过程中添加了具降尿酸活性的互花米草提取物的功能啤酒,测试体外黄嘌呤氧化酶抑制活性并探讨对人群试验受试者血尿酸及其他血生化指标的影响。方法:测试互花米草提取物对高尿酸血症小鼠的降尿酸活性,测试功能啤酒的黄嘌呤氧化酶抑制率;组织人群试验,对样本容量、受试者血尿酸与其他指标(肌酐、谷丙转氨酶、谷草转氨酶)的变化趋势进行分析,通过双侧t检验对人群试验各阶段血尿酸水平的差异显著性进行探讨。结果:互花米草提取物能够有效降低高尿酸血症小鼠的尿酸水平,功能啤酒抑制黄嘌呤氧化酶效果明确且稳定,人群试验中,饮用功能啤酒组的血尿酸水平在试验过程中呈现出逐步降低的趋势,实验结束时与试验开始时差异显著,所有受试者的肌酐、谷丙转氨酶、谷草转氨酶等三项指标基本维持在正常范围内。结论:饮用该款米草功能啤酒可以实现明显的降低血尿酸效果,对肝、肾功能无明显不良影响。Objective:To test the in vitro inhibition on xanthine oxidase as well as to investigate the effects on blood uric acid and other biochemical indicators in population trial participants of a functional beer containing Spartina alterniflora extract with the lowering uric acid effect during the fermentation.Methods:The lowering uric acid activity of S.alterniflora extract on hyperuricemic mice and the inhibition rate of xanthine oxidase of the beer product developed were tested.A population trial was organized.The change trends of the sample volume,subjects'blood uric acid and other indicators(creatinine,alanine aminotransferase,aspartate aminotransferase)were analyzed.The significance of the differences in blood uric acid levels in different stages of the population trial was explored through a bilateral t-test.Results:S.alterniflora extract could effectively reduce the uric acid level of hyperuricemia model mice.The developed functional beer had a clear and stable effect on inhibiting xanthine oxidase.In the population trial,the mean value of the blood uric acid level showed a gradual decline trend during the test process.There was a significant difference between the blood uric acid level at the end of the test and that at the beginning of the test.The levels of creatinine,glutamic acid transaminase,and glutamic acid transamidoinase of all the examinees were basically maintained within the normal range.Conclusion:Drinking this functional beer product was likely to achieve the remarkable effect of lowering the blood uric acid level,without significant adverse effects on liver and kidney function.
