摘　　要：红薯是重要的粮食作物,其富含多种维生素、多糖类、薯蓣皂甙元、原花青素、类胡萝卜素、膳食纤维素及矿物质,本文介绍了红薯的主要的营养成分和保键作用,并对红安县红薯产业发展进行了展望。Sweet potato is an important food crop,which is rich in many vitamins,polysaccharides,diosgenin,proanthocyanidins,carotenoids,dietary fiber and minerals.In this paper,the main nutrients of sweet potato and its bonding function were introduced,and the development of sweet potato industry in Hong'an County was prospected.
