摘 要:为提高萝卜芽苗菜产量和品质,开发富硒萝卜与芽苗菜,以‘四季青’萝卜为试材,设置6个亚硒酸钠处理浓度(0,2,4,6,8和10 mg·L^(-1)),研究外源硒浸种处理对萝卜种子萌发、芽苗菜的生长指标、生理指标和营养品质的影响。结果表明,适宜浓度的亚硒酸钠浸种处理能够有效促进萝卜种子萌发,提高芽苗菜的生长及营养品质。与对照相比,6 mg·L^(-1)亚硒酸钠浸种处理能有效促进萝卜种子萌发和芽苗菜生长,其发芽势、发芽率、鲜重和干重分别提高了7.22%、5.75%、43.43%和46.03%;提升了萝卜芽苗菜的抗氧化能力,SOD、POD和CAT等抗氧化物酶活性显著提高,膜脂过氧化产物MDA含量得到抑制;同时,显著改善了芽苗菜的营养品质,其中硝态氮含量降低了23.30%,可溶性糖和可溶性蛋白含量分别提高了131.25%和80.92%。此外,萝卜芽苗菜中总硒含量随硒处理浓度升高而增加,在10 mg·L^(-1)时最高。综上所述,本试验条件下,最适宜萝卜种子萌发和芽苗菜生长的亚硒酸钠浸种处理浓度是6 mg·L^(-1)。In order to improve the yield and quality of radish sprouts and develop selenium-rich radish and sprouts,six different concentrations(0,2,4,6,8,10 mg·L^(-1))of Na 2 SeO 3 solutions were utilized to explore the effects of exogenous selenium on the seed germination,growth indices,physiological indices and nutritional quality of radish sprouts using the radish cultivar'Sijiqing'as the test materials.The results suggested that the seed soaking treatment with appropriate concentration of Na 2 SeO 3 solution could effectively promote the germination of radish seeds and further improve the growth and nutritional quality of radish sprouts.Compared with the control,the seed soaking treatment with 6 mg·L^(-1)Na 2 SeO 3 solutions could effectively promote the germination of radish seeds and the growth of sprouts,with the germination potential,germination rate,fresh weight and dry weight increased by 7.22%,5.75%,43.43%and 46.03%,respectively.The antioxidant capacity of radish sprouts was improved.The activity of antioxidant enzymes such as SOD,POD and CAT were significantly increased,and the content of MDA in membrane lipid peroxidation products was inhibited.Meanwhile,the nutritional quality of sprouts was significantly elevated,in which the content of nitrate nitrogen decreased by 23.30%,whereas the contents of soluble sugar and soluble protein increased by 131.25%and 80.92%,respectively.Furthermore,the to tal selenium content in radish sprouts would go up with the increase of selenium treatment concentration,which was the highest at 10 mg·L^(-1)Na 2 SeO 3 solutions.In conclusion,the most optimum Na 2 SeO 3 concentration of seed soaking for the radish germination and sprout growth was 6 mg·L^(-1)in this experiment.
