摘  要:培养料是食用菌生长发育的基础,决定栽培产量与品质。双孢蘑菇、姬松茸、草菇等通常采用发酵培养料栽培,研究培养料发酵过程的理化性质和微生物群落结构的变化规律,对培养料发酵技术改进、原材料选择调整、培养料配方优化等具有指导意义。通过查阅文献,系统阐述食用菌培养料发酵过程中的温度、含水率、pH和电导率等的变化,培养料中有机质、总氮、碳氮比的营养变化,纤维素、半纤维素和木质素的物质变化,纤维素酶、木聚糖酶、漆酶的酶活性变化,以及细菌和真菌微生物群落变化规律的研究进展。The cultivation medium is the basis of the growth and development of mushrooms,which determines the cultivation yield and quality.Such as Agaricus bisporus,Agaricus blazei Murrill,and Volvariella volvacea are usually cultivated using composting substrate.Study on physicochemical properties and microbial community structure in the fermentation process of cultivation medium are guiding significance for cultivation medium fermentation technology improvement,raw material selection adjustment,and cultivation medium formula optimization.Through literature review,the changes of temperature,moisture content,pH and electrical conductivity,and the nutritional changes of organic matter,total nitrogen and carbon nitrogen ratio in the culture,the material changes of cellulose,hemicellulose and lignin,the changes of enzyme activity of cellulase,xylanase and laccase,as well as the research progress of the changes of bacteria and fungi microbial community in the fermentation process of mushroom cultivation medium were systematically expounded.
