摘 要:本文以废弃卤虫为试验材料,采用电阻法测定废弃卤虫冻干过程的共晶点和共熔点温度,研究物料厚度、预冻温度、真空压力、冻干时间对废弃卤虫冻干品DHA含量和复水比的影响,并进行各工艺优化集成验证试验。结果表明,废弃卤虫冻干过程的共晶点和共熔点温度分别为-38.0、-26.9~-26.0℃,废弃卤虫最佳冻干工艺为物料厚度6 mm、-40℃预冻、真空压力70 Pa、冻干时间10 h,且加热板温度走势设置为0~40 min,由30℃上升至60℃,60~240 min稳定在60℃。在上述最佳工艺条件下,测得废弃卤虫冻干品DHA含量和复水比分别为3.1 g/kg、12.6。Taking waste brine shrimp as the experimental material,this paper used the electrical resistance method to measure the eutectic point and melting point temperature during the freeze-drying process of waste brine shrimp,studied the effects of material thickness,pre freezing temperature,vacuum pressure and freeze-drying time on the DHA content and rehydration ratio of waste brine shrimp freeze-drying products,and conducted various process optimization integrated validation tests.The results showed that the eutectic point and melting point temperatures during the freezedrying process of waste brine shrimp were-38.0 ℃ and-26.9--26.0 ℃,respectively;the optimal freeze-drying process for waste brine shrimp was 6 mm raw material thickness,-40 ℃ pre freezing,vacuum pressure of 70 Pa,and freezedrying time of 10 hours,and the temperature trend of the heating plate was set to 0-40 minutes,rising from 30 ℃ to60 ℃,and stabilizing at 60 ℃ for 60-240 minutes.Under the optimal process conditions mentioned above,the DHA content and rehydration ratio of the freeze-drying waste brine shrimp were 3.1 g/kg and 12.6,respectively.
