摘　　要：果胶是来源于植物的一种大分子天然多糖,是植物细胞壁的重要成分,其结构复杂,分子量大小不一,功能多样,用途广泛。从不同植物原料和通过不同提取工艺得到的果胶,其酯化度、胶凝性、乳化性等理化特征差异较大,因此,以果胶得率为单一指标衡量果胶提取效果有一定的局限性。故文章从果胶的原料来源、提取方法、理化特性及功能应用等方面进行综述,介绍目前果胶提取及应用研究的新趋势并对其应用前景进行展望,以期为植物果胶的开发与应用提供科学依据。Pectin is a natural polysaccharide and an important component of the plant cell wall.The natural structures of pectin are complex,with varying molecular weights,diverse functions,and wide-ranging applications.The physical and chemical characteristics of pectin vary greatly according to the source of plant raw materials and extraction technologies,such as esterification degree,gelatinability,emulsification,etc.Therefore,only using the yield of pectin as a single index is insufficient to evaluate the pectin extraction efficiency.This paper reviewes the raw material sources,extraction methods,physical and chemical properties,and functional applications of pectin.Moreover,this paper introduces new trends and prospects in pectin research,providing a scientific basis for the development and application of plant-derived pectin.
