摘 要:[目的]明确国内晾晒烟作为口含烟原料的可行性。[方法]收集了国内不同地域及类型的晾晒烟为研究对象,分析烟叶样品的常规化学成分、物理特性及感官质量的指标,并对所得数据进行相关性分析。[结果]国内晾晒烟样品烟碱、还原糖含量差异很大;黄花烟、晒红烟的烟碱含量显著高于晒黄烟。还原糖含量从高到低依次为晒黄烟、香料烟、晒红烟、黄花烟、雪茄烟,晒黄烟还原糖含量显著高于其他晾晒烟类型;不同区域间还原糖含量也存在差异。国内晾晒烟烟叶pH均值为5.33,偏酸性;以pH可调度来看,调节后pH可升高至原pH的1.14~1.49倍。国内晾晒烟烟叶中大粒径粉末得率较高,变幅为68.00%~87.00%,均值78.38%;35.38%的样品中大粒径粉末得率超过80.00%。国内晾晒烟烟叶的烟碱含量、总氮含量、氮碱比与口含烟感官质量有较为紧密的相关关系。[结论]国内晾晒烟原料在多维度上均较符合口含烟制作质量标准。[Objective]To clarify the feasibility of domestic air and sun cured tobacco as a raw material for Snus.[Method]Air and sun cured tobacco from different regions and types in China were collected as the research object,analyzed the conventional chemical composition,physi⁃cal characteristics and sensory quality indicators of tobacco leaf samples,and made correlation analysis on the data obtained.[Result]The con⁃tents of nicotine and reducing sugar in domestic air and sun cured tobacco samples was greatly different;the nicotine content of sun⁃cured red tobacco and sun dried red tobacco was significantly higher than that of sun⁃cured yellow tobacco.The content of reducing sugar from high to low was sun⁃cured yellow tobacco,oriental tobacco,sun⁃cured red tobacco,yellow flower tobacco,cigar tobacco.The content of reducing sugar in sun⁃cured yellow tobacco was significantly higher than other types;there were also differences between different regions.The average pH of do⁃mestic air and sun cured tobacco leaves was 5.33,which was slightly acidic;in terms of pH regulation,the adjusted pH could rise to 1.14-149 times of the original pH.③The yield of medium and large particle size powder in domestic air and sun cured tobacco leaves was relative⁃ly high,ranging from 68.00%to 87.00%,with an average of 78.38%;the yield of medium and large size powder in 35.38%of the samples ex⁃ceeded 80.00%.Nicotine,total nitrogen,nitrogen⁃alkali ratio of domestic air cured tobacco leaves were closely related to the sensory quality of Snus.[Conclusion]The raw materials for air and sun cured tobacco in China are in line with the quality standards for Snus production in terms of multi⁃dimensional.
