摘  要:文章旨在研究大豆浓缩蛋白替代鱼粉对石斑鱼生长性能、免疫功能及肌肉品质的影响。试验将240尾石斑鱼苗随机分为4组,每组3个重复,每个重复20尾。其中,各组分别采用0%、20%、40%、60%大豆浓缩蛋白替代饲料配方中的鱼粉,分别记为SPC0、SPC20、SPC40、SPC60组,饲喂为期70 d。结果表明,(1)与SPC0组相比,SPC20组、SPC40组、SPC60组石斑鱼末重显著提高5.34%、6.87%、4.05%(P<0.05);与SPC0组相比,SPC20组、SPC40组、SPC60组石斑鱼增重率显著提高了26.82%、31.83%、18.82%(P<0.05);与SPC0组相比,SPC40组饲料系数显著降低了7.06%(P<0.05)。(2)与SPC0组相比,SPC20组血清中超氧化物歧化酶、过氧化氢酶活性显著提高(P<0.05);与SPC0组相比,SPC20组血清中丙二醛活性显著降低(P<0.05)。(3)4组石斑鱼背肌的水分、蛋白质、脂肪等指标均无显著差异(P>0.05)。结论:40%大豆浓缩蛋白替代饲料配方中的鱼粉能提高石斑鱼生长性能;20%大豆浓缩蛋白替代饲料配方中的鱼粉能提高石斑鱼免疫功能。The purpose of this experiment was to study the effects of soybean protein concentrate instead of fish meal on growth performance,immune function and muscle quality of grouper.Select 240 grouper fry and randomly divide them into 4 groups,with 3 replicates in each group and 20 replicates in each group.Among them,each group used 0%,20%,40%,and 60%soy protein concentrate to replace fish meal in the feed formula,and were recorded as SPC0,SPC20,SPC40,and SPC60 groups,with a feeding period of 70 days.Result:(1)Compared with the SPC0 group,the SPC20,SPC40,and SPC60 groups significantly increased the tail weight of grouper by 5.34%,6.87%,and 4.05%(P<0.05);Compared with the SPC0 group,the weight gain rates of grouper in the SPC20,SPC40,and SPC60 groups were significantly increased by 26.82%,31.83%,and 18.82%(P<0.05);Compared with the SPC0 group,the feed coefficient of the SPC40 group significantly decreased by 7.06%(P<0.05).(2)Compared with SPC0 group,the activities of superoxide dismutase and catalase in serum of SPC20 group were significantly increased(P<0.05);Compared with the SPC0 group,the serum malondialdehyde activity in the SPC20 group was significantly reduced(P<0.05).(3)There were no significant differences in the water content,protein,fat and other indicators of the dorsal muscles of the four groups of groupers(P>0.05).Conclusion:40%soy protein concentrate can improve the growth performance of grouper by replacing fish meal in the feed formula;Replacing fish meal in the feed formula with 20%soy protein concentrate can improve the immune function of grouper.
