摘  要:为探讨紫玉米及其秸秆对育肥牛生长性能、屠宰性能、肉品质及抗氧化能力的影响,选取育肥期奶公牛16头,随机分为2组。其中,试验组饲喂紫玉米籽粒和紫玉米秸秆青贮,对照组饲喂普通黄玉米和普通黄玉米秸秆青贮,试验期210 d。结果表明:与对照组相比,紫玉米及其秸秆处理组的牛眼肌面积提高了12.66%(P<0.05);牛肉剪切力降低了7.91%(P<0.05),熟肉率增加了7.48%(P<0.05),加压失水率降低了1.88%(P<0.05),肉色L*(亮度值)提高了4.85%(P<0.05);牛肉中谷氨酸、甘氨酸、总氨基酸和风味氨基酸含量分别显著增加6.86%、6.52%、3.98%、5.40%(P<0.05),且除组氨酸外其余氨基酸含量均有所增加;抗氧化指标SOD、GSH-Px活性及T-AOC含量分别显著提高9.41%、10.58%、27.16%(P<0.05),MDA含量显著降低35.40%(P<0.05)。综合而言,紫玉米及其秸秆在奶公牛育肥日粮中的应用有助于改善牛屠宰性能和牛肉品质,使牛肉味道更鲜美、汤汁更浓郁,值得在肉牛生产中推广。In order to investigate the effects of purple corn and its straw on growth,slaughter performance,meat quality and antioxidant capacity of beef cattle,16 dairy bulls at fattening stage were selected and randomly divided into 2 groups(test group and control group).The test group were fed purple corn grains and purple corn straw silage,while the control group were fed common yellow corn and common yellow corn straw silage.The test period was 210 d.The results showed that compared with the control group,the eye muscle area of beef cattle in the test group was increased by 12.66%(P<0.05);The beef shear force was decreased by 7.91%(P<0.05),the cooked meat rate was increased by 7.48%(P<0.05);The pressurized water loss rate was decreased by 1.88%(P<0.05),meat color L*(brightness value)was increased by 4.85%(P<0.05);In which the contents of glutamic acid,glycine,total amino acid and flavor amino acid were increased 6.86%,6.52%,3.98% and 5.40%(P<0.05),respectively,and all the amino acid contents except histidine were increased;The antioxidant capacity indices of SOD and GSH-Px activities also T-AOC were significantly increased by 9.41%,10.58%,27.16%(P<0.05),but MDA content was significantly decreased by 35.40%(P<0.05).In conclusion,the application of purple corn and its straw in beef cattle fattening diet could be helpful to improve the slaughter performance and beef quality,make the beef taste more delicious,make the soup taste more intense,which is worthy of promotion in beef cattle production.
