摘 要:为提高烟叶资源的利用效率,研究了烟叶不同段位间外观质量、化学成分、感官质量的差异,以探讨分类加工的可行性,并通过开展烤烟分类加工的工艺测试,研究了成品片烟化学成分及感官质量的变化。结果表明:烤烟烟叶不同段位间的质量差异明显,叶身段的总糖、还原糖显著高于叶基段,还原糖含量净差为5.59%;叶基段的外观质量及感官质量明显较差,且叶基段与叶身段的化学成分差异显著;分类加工与常规加工比较,烤后成品片烟化学成分差异不显著,但成品片烟的感官质量有明显提升。基于烟叶不同段位间质量差异及不同加工方式对成品片烟质量的影响,采用分类加工能够有效提升烟叶资源的利用效率,缓解当前高档卷烟供给不足的现状。In order to improve the utilization efficiency of tobacco leaf resources,the differences in appearance quality,chemical composition and sensory quality between different segments of tobacco leaf were studied to explore the feasibility of classification processing.Through the process testing of tobacco classification processing,the changes in chemical composition and sensory quality of finished tobacco were studied.The results showed that there were significant differences in quality between different segments of flue-cured tobacco leaves,the total sugar and reducing sugar in the leaf body segment were significantly higher than those in the leaf base segment,with a net difference in reducing sugar content of 5.59%.The appearance and sensory quality of the leaf base segment were significantly poor.Additionally,there were significant differences in chemical composition between the leaf base segment and the leaf body segment.Compared with conventional processing,there was no significant difference in the chemical composition of the roasted finished tobacco slices,but the sensory quality of the finished tobacco slices was significantly improved.Based on the quality differences between different segments of tobacco and the impact of different processing methods on the quality of finished tobacco,using classification processing can effectively improve the utilization efficiency of tobacco resources and alleviate the current situation of insufficient supply of high-end cigarettes.
