摘  要:为阐述毛竹笋采收后在常规保存方式下的营养成分和酶活性变化及其驱动因素,本研究对江西典型毛竹林竹笋进行取样,并监测采后一个月内毛竹笋的营养成分和酶活性变化。研究表明,毛竹笋自采收后失重率、可溶性蛋白含量呈下降趋势,还原性糖、粗纤维和单宁含量呈递增趋势,而呼吸强度、脂肪含量、PPO和POD则呈先升后降的趋势。相关性分析认为失重率及粗纤维含量与其他指标间相关性大。关联度分析表明单宁含量是描述毛竹笋品质变化的最优指标,其次为粗纤维和可溶性蛋白含量。分析认为采收损伤导致的氧化应激和笋自身发育趋势是驱动竹笋代谢物转变和品质下降的主要动力,精细化采收降低损伤可能对维持竹笋采后营养保留具有正面作用。In order to elucidate the nutrient and enzymatic activity variation of moso bamboo(Phyllostachy edulis)shoots after harvesting and the factors driving it,this research sampled shoots from typical moso bamboo production areas in Jiangxi and monitored the changes of food indexes in shoot tissues over a period of one month.We found that,after harvesting,weight loss and soluble protein content tended to decrease,while the content of reducing sugars,crude fiber and tannins tended to increase,the respiratory intensity,the fat content,peroxidase(PPO)and polyphenol oxidase(POD)activity tended to increase and then decrease.Correlation analysis showed that weight loss rate and crude fiber were highly correlated with other indexes.The correlation degree analysis revealed that tannins was the best indicator to describe the quality change of moso bamboo shoots,followed by crude fiber and soluble protein content.The results suggested that oxidative stress caused by harvest damage and the developmental tendency of the shoots themselves were the main drivers of metabolite transformation and decline in shoot quality,and that fine harvesting to reduce damage may had potentially positive effects on maintaining post-harvest nutrient of shoots.
