摘　　要：畜禽屠宰生产中的主要副产物——畜禽血液具有很高的营养价值,其所含的血红素是血红蛋白、肌红蛋白、细胞色素、过氧化物酶、过氧化氢酶等众多蛋白质的辅基,具有重要的生理功能,广泛应用于食品、药品、化妆品和生物化学分析方面。笔者对制备血红素的原料(血粉、血红蛋白粉、新鲜动物血液)及处理方式,以及血红素的提取方法(酶解法、羧甲基纤维素法、冰醋酸法等)和定量测定方法(光谱法、色谱法、质谱等)及在食品、医药等方面的应用进行了综述,旨在为畜禽血液中血红素的提取方法研究及产品研发提供参考。Livestock and poultry blood,the main by-product of livestock and poultry slaughtering production,has high nutritional value.The heme contained in it is the cogroup of many proteins such as hemoglobin,myoglobin,cytochrome,peroxidase,catalase,and has important physiological functions.It is widely used in food,medicine,cosmetics and biochemical analysis.The preparation and treatment of heme raw materials(fresh blood,haemoglobin powder,blood powder),extraction methods(enzyme hydrolysis,carboxymethyl cellulose method and ice acetic acid method),and detection methods(spectrometry,chromatography,mass spectrometry)of heme and the application of heme in food,medicine and other aspects were summarized in this paper.The aim was to provide reference for the extraction method of heme in livestock and poultry blood and product development.
