摘  要:研究结合近红外光谱技术和偏最小二乘法,建立了宣酒芝麻香和小窖绵柔入池酒赔中水分、酸度、淀粉的定量模型。芝麻香酒赔水分、酸度、淀粉的预测值和实测值的平均绝对误差分别为0.80%、0.09 mmol/10g、0.47%;小窖绵柔酒赔水分、酸度、淀粉的预测值和实测值的平均绝对误差分别为0.84%、0.14 mmol/10g、0.85%。所建模型能满足日常生产的需要,大大提高了工作效率。In this study,the models for moisture,acidity and starch in xuanjiu zhimaxiang and small pit mianrou fermented grains were established by near-infrared spectroscopy technology and partial least squares method.The average absolute deviation of zhimaxiang fermented grains between predictive value and actual value were 0.80%、0.09 mmol/10g and 0.47%,respectively;the average absolute deviation of small pit mianrou fermented grains between predictive value and actual value were 0.84% 、0.14 mmol/10g and 0.85%,respectively.The models can meet the production needs and significantly improve working efficiency.
