摘  要:目的通过对周口校园学生餐中营养成分的监测分析,了解周口市校园学生餐的营养状况,为制定校园学生餐营养干预计划提供依据。方法在周口市城市、农村各选择两所幼儿园、小学、初中作为监测点,幼儿园、小学每餐采集5人份作为一个样品,中学每餐采集3人份作为一个样品,采用现有国家标准检测方法监测学生餐中的维生素和微量元素。结果周口市幼小初学生餐普遍存在维生素A、钙供应量远远低于参考摄入量,氯化钠含量严重超标,微量元素锌、硒和脂肪含量偏低。结论学校和配餐公司应加强内部管理,配备餐饮管理相关的专业技术人员和专职营养师。建立家长陪餐制度,对陪餐家长提出的食品安全与营养健康等方面的意见和建议,及时研究反馈。针对校园餐中鱼、虾、牛奶、坚果等食物供应较少的现状,建议家长在家多为孩子增加此类食物的摄入。此外,加强中小学健康教育,老师与家长多沟通交流,及时把学生出现的不良饮食习惯反馈给家长,共同帮助学生建立健康的饮食习惯。Objective This paper aims to understand the nutritional status of student meals in Zhoukou City by monitoring and analyzing their nutritional composition,so as to provide basis for formulating the nutritional intervention plan.Methods Two kindergartens,two primary schools and two junior high schools were selected as monitoring points in urban and rural areas of Zhoukou City.Five meals from each kindergarten and primary school were sampled as one sample,and three meals from each junior middle school were collected as one sample.Results The supply of vitamin A and calcium from the meals for kindergarten,primary school and junior high school were far lower than the reference intake,the content of salt exceeded the standard seriously,and the contents of trace elements zinc,selenium and fat were low.Conclusion Schools and catering companies should strengthen internal management and be equipped with professional and technical personnel and full-time dietitians related to catering management.A system of parents'accompanying meals should be established,and timely research and feedback on the opinions and suggestions on food safety and nutrition and health should be put forward by the accompanying parents.In the view of low supply of fish,shrimp,milk,nuts and other foods in campus meals,parents are advised to increase the intake of such foods for children at home.In addition,health education in primary and secondary schools should be strengthened,teachers should have more communication with parents,timely feedback students'bad eating habits to parents,so as to jointly help students establish healthy eating habits.
