摘  要:以牛油果为主要原料,采用响应面优化超高压法提取牛油果油的工艺,并研究对运动大鼠肝组织抗氧化能力的影响。考察了单因素液料比、超高压压力、保压时间、溶剂种类对牛油果油提取率的影响。结果表明:当液料比13∶1(mL/g)、超高压压力420 MPa、保压时间7 min,得出牛油果油平均提取率为67.46%,与预测值接近。运动大鼠试验表明,灌胃牛油果油可以使大鼠SOD、CAT水平明显提高,MDA水平明显降低,且与剂量呈正比,还可以降低大鼠ALT、AST两种转氨酶水平,说明牛油果油具有良好的抗氧化能力,可以有效降低大鼠运动之后产生大量自由基对肝组织造成的损伤,对肝组织起到保护作用。Avocado oil was extracted by ultra-high pressure method and the response surface methodology(RSM)was used to optimize the extraction process.The antioxidant capacity of the avocado oil on liver tissue in exercise rats was studied.Single factor test was used to study the effect of liquid to material ratio,ultra-high pressure,holding time and solvent type on the extraction rate of avocado oil.The results showed that,when the liquid material ratio was 13∶1(mL/g),the ultra-high pressure was 420 MPa,and the pressure holding time was 7 min,the average extraction rate of avocado oil was 67.46%,which was close to the predicted value.The exercise rat experiment showed that gavage of avocado oil significantly increased the level of SOD and CAT in rats,and significantly reduced the level of MDA,and was in a positive correlation to the dose.The avocado oil also reduced the levels of ALT and AST in rats,which indicating its good antioxidant capacity.The avocado oil effectively reduced the damage to liver tissue of rats caused by a large number of free radicals after exercise,and had a protective effect on liver tissue of exercise rats.
