摘 要:为丰富梨膏种类和提升产品品质,以安梨汁为材料,采用常压加热浓缩方法制备安梨膏,探究7种不同药食同源药材浸提液添加对其理化指标、感官品质和抗氧化能力的影响。结果表明:相比于对照组(以安梨汁单独熬制),添加不同浸提液后,感官评分发生显著变化,色度均显著变暗(P<0.05),其中金银花组感官品质最高;8组安梨膏均不含蔗糖,但含有果糖、山梨醇和葡萄糖,各组之间存在显著差异(P<0.05),其中金银花组葡萄糖和山梨醇含量最高,罗汉果组果糖含量最高;总酚、总黄酮含量及DPPH自由基清除率均显著增加(P<0.05);电子鼻和电子舌检测表明,各梨膏气味和滋味之间存在差别,可进行有效区分。综上,药食同源类药材浸提液添加可显著提升梨膏总酚、总黄酮含量和抗氧化活性,赋予梨膏特殊滋味和气味。Anli pear pastes was produced by heating and concentrating of pear juice at the normal pressure.In order to develop variety products and improve the quality,the extracts from 7 kinds of medicine and food were added into the Anli pear pastes products.The physical and chemical indexes,sensory quality and antioxidant capacity of the new products were investigated.The results showed that,compared with traditional pear paste,the new products sensory scores were significantly changed,and the chromaticity was much darker after adding different extracts(P<0.05),and the sensory quality of the Honeysuckle group was the highest.The 8 kinds of Anli pear paste products did not have sucrose,but contained fructose,sorbitol and glucose,and there was a significant difference among groups(P<0.05).The glucose and sorbitol were both at the highest in Honeysuckle group,and fructose in Siraitia Grosvenorii group was the highest.The contents of total phenols,flavonoids and DPPH radical scavenging rate were all significantly increased(P<0.05).The electronic nose and E-tongue tests showed that the smell and taste of 8 kinds of pear pastes were all different,and could be distinguished effectively.In conclusion,the extracts of homologous medicinal and food substances could significantly improve the contents of total phenols,flavonoids and antioxidant activity and give special taste and flavor to the pear pastes.
