海胆营养成分及活性物质研究进展

摘　　要：简述了常见养殖海胆的蛋白质、氨基酸、脂肪酸及微量元素等营养成分和多糖、色素等活性物质,对比了常见海胆的各营养成分含量,总结了海胆活性物质的生理功效。指出,海胆作为药食同源的优质海产品,富含种类丰富的蛋白质、氨基酸、脂质和微量元素,具有很高的膳食营养价值。其富含的多不饱和脂肪酸ARA、EPA、DHA具有抗炎、抗肿瘤等作用,海胆抗菌肽、抗氧化肽和管足黏性蛋白在生物医学方面有深远的应用前景。提出,加强对海胆营养物质和活性物质及其功效的研究,可为海胆经济性状的筛选、海胆新品种的培育以及海胆营养物质和特殊活性物质的提取与应用提供参考。This paper briefly describes the nutrients such as proteins,amino acids,fatty acids and trace elements,and active substances such as polysaccharides and pigments of common cultured sea urchins,compares the content of each nutrient in this type of sea urchins,and summarizes the physiological efficacy of sea urchins'active substances.It was pointed out that sea urchin,as a high-quality seafood with the same origin as medicine and food,is rich in proteins,amino acids,lipids and trace elements,and has a high dietary nutritional value.Moreover,the polyunsaturated fatty acids ARA,EPA and DHA have anti-inflammatory and anti-tumor effects,and the antimicrobial peptide,antioxidant peptide and mucin of sea urchin have far-reaching application prospects in biomedicine,which suggests that strengthening the research on sea urchin nutrients and actives and their efficacy can provide a reference for the screening of sea urchin's economic traits,the cultivation of new varieties of sea urchin as well as extraction and application of sea urchin nutrients and special actives.It is suggested that strengthening the research on sea urchin nutrients and active substances and their efficacy can provide reference for the screening of sea urchin economic traits,cultivation of new sea urchin varieties and extraction of sea urchin nutrients and special active substances.
