摘  要:二十二碳六烯酸(DHA)ω-3多不饱和长链脂肪酸具有抗癌、消炎等众多生理功能,对婴幼儿生长发育起重要作用,还可预防众多老年病。DHA油脂分为鱼油和藻油,鱼油使用历史悠久,藻油最近成为研究热点,洁净度和新鲜度更高,二者由于富含不饱和键都存在氧化严重的问题。DHA油脂的氧化主要受提取原料、提取工艺和抗氧化保存三方面影响,所产生的过氧化物、自由基等氧化产物对人体有众多不利影响,易诱发多种疾病,因此生产过程中对过氧化值和茴香胺值参数的控制显得格外重要。筛选新鲜且洁净的原料,探索保护油脂不被氧化的提炼工艺和抗氧化技术,获得高新鲜度的DHA油脂非常必要且具有广阔前景。针对DHA油脂的新鲜度从以上三方面进行综述,认为藻油全方位质量更好,提炼和抗氧化工艺尚有巨大发展空间。Docosahexaenoic acid,ω-3 polyunsaturated long-chain fatty acids have many physiological functions such as anti-cancer,anti-inflammatory,anti-depression,neuroprotection,etc.They play an important role in the growth of infants and children’s brains,and can prevent many age-related diseases.DHA oil is divided into fish oil and algal oil.Fish oil has a long history of use.Algal oil has recently been a research hotspot,with higher cleanliness and freshness.Both of them still have serious oxidation problems due to their rich polyunsaturated bonds.The oxidation of DHA oils is mainly affected by the extraction of raw materials,the extraction process,and antioxidant preservation.The resulting peroxide,free radicals,and other oxidation products have numerous adverse effects on the human body,and are prone to induce a variety of diseases.Therefore,the control of peroxide value and anisidine value parameters during the production process is particularly important.It is necessary and promising to obtain high-freshness DHA oils by selecting fresh raw materials and exploring refining processes and antioxidants to protect oils from oxidation.The freshness of DHA oil is reviewed from the three aspects mentioned above.It is concluded that algal oil is better in all aspects,but the refining and antioxidant processes still need a great deal of improvement.
