摘 要:目前协调稻谷干燥速率与干燥后品质依然是亟待解决的问题,探究稻谷干燥形成裂纹和爆腰机理是解决稻谷干燥后品质下降的关键。玻璃化转变理论可阐明稻谷在干燥和缓苏阶段形成裂纹和爆腰的机理,为优化稻谷干燥参数提供理论依据,为稻谷变温干燥奠定理论基础。文章总结了玻璃化转变理论在稻谷干燥中的研究进展及应用现状,并阐述了影响稻谷玻璃化转变的主要因素,为优化稻谷变温干燥工艺提供理论指导。At present,it is still an urgent problem to coordinate the drying rate and the quality of rice after drying.The key to solve the quality degradation of rice after drying is to explore the mechanism of fissuring and crack.The glass transition theory can clarify the mechanism of fissuring and crack in rice during the drying and tempering stage,and provide a theoretical basis for optimizing the parameters of rice drying and laying a theoretical foundation for rice drying at variable temperature.In this paper,the research progress and application status of glass transition theory in rice drying were summarized,and the main factors affecting the glass transition of rice were expounded,so as to provide theoretical guidance for optimizing the temperature drying process of rice.
