摘  要:目的了解吉林省食品中铅污染状况,为吉林省食品安全风险监管提供科学依据。方法采用交叉采样的方式采集吉林省内21大类227小类食品样品,共计7276件,按照国家标准方法进行检验。结果21大类食品铅总体平均检出率58.81%,总体平均值为0.067 mg/kg。8大类食品中铅元素存在超标现象:蔬菜及制品1.49%、水果及制品1.74%、谷物及制品0.62%、肉与肉制品0.51%、水产动物及制品0.21%、蛋鸡蛋制品7.45%、自制饮料24.2%、其他类食品3.08%,总超标率为1.21%。对食品小类分析,其中皮蛋、畜禽内脏、甲壳类(虾、蟹)铅蓄积程度高于食品中铅的总平均含量,分别为0.510、0.160、0.100 mg/kg。结论吉林省食品中普遍存在铅污染,总体污染程度较轻,吉林省食品摄入的铅风险较低;皮蛋和自制饮料中铅超标率相对较高,监测缺乏连续性,建议加强监测。Objective To understand the status of lead contamination in food in Jilin Province,and provide scientific basis of food safety risk supervision for Jilin Province.Methods 7276 food samples were collected from 21 categories and 227 subcategories in Jilin Province by cross-sampling method,and tested according to national standard method.Results The average detection rate of 21 kinds of food was 58.81%,and the average was 0.067 mg/kg.Lead elements in 8 types of food were found to exceed the standard:vegetables and products 1.49%,fruits and products 1.74%,grains and products 0.62%,meat and meat products 0.51%,aquatic animals and products 0.21%,eggs and egg products 7.45%,homemade beverages 24.2%,and other foods 3.08%,with a total exceeding rate of 1.21%.Analysis of food subcategories showed that the accumulation degree of lead in century eggs,animal organs,crustaceans(shrimp,crab)was higher than the total average content of lead in food,which were 0.510,0.160 and 0.100 mg/kg,respectively.Conclusion Lead pollution is widespread in food in Jilin Province,but the overall pollution degree is light,and the risk of lead introduction into food intake in Jilin Province is low.The lead excess rate in century egg and homemade beverage is relatively high,and the monitoring is not continuous,so it is suggested to strengthen the monitoring.
