摘 要:以罗汉果、金银花、桔梗等为主要原料,研究开发一款具有清咽润喉功能的植物固体饮料。采用单因素试验对浓缩液的喷雾干燥工艺进行优化,通过正交试验对固体饮料的风味进行优化。结果表明,喷雾干燥最佳工艺条件为进风温度175℃,进料流量150μL/min,助干剂麦芽糊精添加量20%,最佳配方比例为喷干粉∶赤藓糖醇∶柠檬酸∶魔芋精粉=1.5∶0.40∶0.01∶0.03,所获得的成品酸甜可口、色泽均一,且便于携带与饮用。With Siraitiae grosvenorii,Lonicerae japonicae Flos,Platycodonis Radix,etc.as the main raw materials,a plant solid drink with the function of clearing the throat and moistening the throat is developed.The spray-drying process of concentrated liquid was optimized by single factor test method,and the flavor of solid beverage was optimized by orthogonal test.The results showed that the optimum process conditions for spray drying were the inlet air temperature of 175 ℃,the feed flow rate of 150 μL/min,and the content of maltodextrin as a drying aid of 20%.The optimal formula ratio was 1.5∶0.40∶0.01∶0.03 of spray-dried powder∶erythritol∶citric acid∶konjac powder,and the obtained finished product was sweet and sour,with uniform color,and was easy to carry and drink.
