摘  要:由霍乱弧菌感染引起的霍乱病例在我国各地仍时有发生,以水产品为代表的食源性传播已成为霍乱弧菌的最主要传播方式。为减少由霍乱弧菌引起的食品感染事件的发生及为食品进出口企业与相关标准制定机构提供参考,更好地维护食品安全与经济发展,本文系统分析与比较了中国与其他国家/地区(国际组织)食品卫生标准中霍乱弧菌限量的异同。通过研究发现,包括中国在内的有些国家/地区(国际组织)基于国家(地区)整体食品安全风险评估未在食品卫生标准中对霍乱弧菌制定限量标准,英国、美国、加拿大、中国香港特别行政区与中国澳门特别行政区对霍乱弧菌则制定了较为严格的限量标准。对中国某些水产品消费量较大的地区来说,由霍乱弧菌带来的潜在食品安全风险仍然比较高,建议这些地区根据自己的实际情况,定期进行风险监测或制定针对霍乱弧菌的地方标准。Cholera cases caused by Vibrio cholerae infection still occur in various parts of China,and foodborne transmission,represented by aquatic products,has become the main transmission mode of Vibrio cholerae.In order to reduce food infections caused by Vibrio cholerae and provide reference for food import and export enterprises and relevant standards development institutions,and better maintain food safety and economic development,this article systematically analyzes and compares the similarities and differences in the food hygiene standards of Vibrio cholerae between China and other countries/regions(international organizations).Through research,it has been found that some countries/regions(international organizations),including China,have not set limits on Vibrio cholerae in food hygiene standards based on national overall food safety risk assessment,while the United Kingdom,the United States,Canada,the Hong Kong Special Administrative Region of China,and the Macao Special Administrative Region have set stricter limit standards for Vibrio cholerae.For some regions in China with high consumption of aquatic products,the potential food safety risks brought by Vibrio cholerae are still relatively high.It is recommended that these regions regularly conduct risk monitoring or develop local standards for Vibrio cholerae based on their actual situation.
