摘 要:以玉米须、水晶梨为主要原料研制复合保健饮料,并采用单因素试验及正交试验优化玉米须水晶梨复合保健饮料的工艺配方。结果表明,玉米须水晶梨复合保健饮料的最佳工艺配方为:玉米须与水晶梨提取液的质量比2∶7,黄原胶添加量0.03%,柠檬酸添加量0.045%,木糖醇添加量6%,蜂蜜添加量0.02%。在此条件下,玉米须水晶梨复合保健饮料清新可口、酸甜适口、风味协调、色泽均匀。This study used corn whiskers and crystal pears as the main raw materials,and determined the optimal formula of corn whiskers and crystal pears composite health drink through single factor and orthogonal experiments,with sensory scores as indicators.The results showed that the optimal mass addition ratio of corn silk extract to crystal pear juice was 2:7,the use of Xanthan gum was 0.03%,the use of citric acid was 0.045%,the use of xylitol was 6%,the use of honey was 0.02%.Under these conditions,the corn whisker crystal pear composite health drink is fresh and delicious,with suitable acidity and sweetness,a fusion of flavors,and a peaceful color.
