摘  要:为研究市售薰衣草蜂蜜的品质特性,采用现有标准方法对薰衣草蜂蜜的理化指标进行测定,采用分光光度法对薰衣草蜂蜜抗氧化成分(总酚、总黄酮、脯氨酸)的含量和抗氧化能力(DPPH、超氧阴离子、ABTS^(+)自由基清除能力和总抗氧化性)进行测定。理化指标测定结果显示各项指标均符合国家和行业标准要求;总酚含量范围为16.51~29.76 mg GAE/100 g,总黄酮含量范围为8.91~21.07 mg QE/100 g,脯氨酸含量范围为42.75~231.76 mg/100 g。DPPH自由基清除能力的IC50值范围为8.97~34.73 mg/mL,超氧阴离子自由基清除能力的IC_(50)值范围为185.53~313.55mg/mL,ABTS^(+)自由基清除能力的IC_(50)值范围为2.99~5.18 mg/mL,总抗氧化性范围为136.95mg/mL~475.71mg/100g;10个薰衣草蜂蜜样品抗氧化能力由强到弱分别为:LM-1>LY-8>LH-6>LS-9>LL-10>LZ-2>LF-7>LT-5>LX-3>LJ-4。对薰衣草蜂蜜抗氧化成分和抗氧化能力作相关性分析,薰衣草蜂蜜的总酚含量与ABTS^(+)自由基清除能力呈显著正相关(r=0.729*),总黄酮含量与总抗氧化能力呈显著正相关(r=0.808**),脯氨酸与DPPH自由基清除能力呈显著正相关(r=0.754*)。研究结果表明,薰衣草蜂蜜较其他常见蜂蜜有较强的抗氧化能力,值得市场宣传和推广。In order to study the quality characteristics of lavender honey sold in the market,the basic physical and chemical parameters of lavender honey were determined by the present standard methods.The content of antioxidant compounds(total phenol,total flavone,proline)and antioxidant capacity(DPPH free radical scavenging capacity,superoxide anion free radical scavenging capacity,ABTS^(+)free radical scavenging capacity and total antioxidant capacity)of lavender honey were determined by spectrophotometry.The results of physical and chemical parameters showed that the all chemical parameters meet the requirements of national and industrial standards.The content range of total phenol is 16.51-29.76 mg GAE/100 g.The content range of total flavonoids is 8.91-21.07 mg QE/100 g.The content of proline ranges from 42.75 mg/100 g to 231.76 mg/100 g.The IC_(50) value range of DPPH free radical scavenging capacity is 8.97-34.73 mg/mL.The IC_(50) value range of superoxide anion radical scavenging capacity is 185.53-313.55 mg/mL.The IC_(50) value range of ABTS^(+)free radical scavenging capacity is 2.99-5.18 mg/mL.The total antioxidant capacity ranges from 136.95 mg/mL to 475.71 mg/100 g.The antioxidant capacity of 10 lavender honey samples from strong to weak is LM-1>LY-8>LH-6>LS-9>LL-10>LZ-2>LF-7>LT-5>LX-3>LJ-4.The correlation analysis of the antioxidant components and antioxidant capacity of lavender honey showed that the total phenol content was significantly positively correlated with the ABTS^(+)free radical scavenging capacity(r=0.729*).The content of total flavonoids was positively correlated with total antioxidant capacity(r=0.808**).Proline was positively correlated with DPPH free radical scavenging capacity(r=0.754*).This study shows that lavender honey has stronger antioxidant capacity than other common honey,which is worthy of market publicity and promotion.
