摘　　要：辣椒富含胡萝卜素、辣椒红素和辣椒素等成分,具有调味、增色、健胃、消食等功效。辣椒副产品包括辣椒叶、辣椒秆、辣椒籽、辣椒粕及辣椒粉等,富含维生素、粗蛋白质、微量元素等营养成分。辣椒及其副产品能够提高动物生产性能,改善肉品质,增强机体免疫能力。文章综述辣椒及其副产品的营养价值、在动物生产中的应用,为其在动物生产中的应用提供参考。Pepper is rich in carotene,capsanthin,capsaicin and other components,with seasoning,color,stomach strengthening,digestion and other effects.The by-products of pepper include pepper leaves,pepper rods,pepper seeds,pepper meal and pepper powder,which contain vitamins,crude protein,trace elements and other nutrients.Pepper and its by-products can improve animal production performance,meat quality and body immune capacity.In the paper,the nutritional value and application of pepper and its by-products in animal production are reviewed,in order to provide reference for the utilization of pepper and its by-products in animal production.
