摘 要:以龙山县鲜卷丹百合3~4层鳞茎外片(采取人工拨片的方式由外向内取材)为原料,通过正交试验确定了最佳的复合护色剂配方为柠檬酸0.8%、半胱氨酸0.25%、抗坏血酸0.3%;并选取热烫时间、护色时间、鼓风干燥温度3个因素进行响应面法试验,以色泽L值为评价指标,获得最佳工艺参数为热烫时间8 min、复合护色剂护色时间30 min、鼓风干燥温度69℃,在该条件下百合粉色泽L值的理论值为87.27,试验均值为87.15,达到了理论值的99.9%,抑制褐变的效果良好,说明获得的百合粉最优加工工艺参数是可靠的。Manually taking three to four layers of outer scales from the outside to the inside of bulbs of fresh tiger lily(Lilium lancifolium)grown in Longshan County as raw material,this study determined the optimal formula of compound browning inhibitor through the orthogonal test,which was composed of 0.8%citric acid,0.25%cysteine,and 0.3%ascorbic acid.Three factors of blanching time,colour protecting time,air-blower drying temperature were selected for response surface methodology test,with L value as evaluation index to optimize the processing parameters of lily bulb powder.The results demonstrated that the best technological parameters were:blanching 8 min,color protecting 30 min,air-blower drying temperature 69℃,under which the theoretical L value of lily bulb powder was calculated to be 87.27,while the practical L value was averagely 87.15,up to 99.9%approximation,demonstrating that the browning inhibition effect is good and the obtained optimal processing parameters of lily bulb powder are reliable.
