摘 要:为探究绿茶在水醇复合体系中的浸提规律,以绿碎片茶为原料,研究绿茶在酒精度45%vol的白酒和不同浓度乙醇溶液中浸提的总浸提率、浸提液中茶多酚和游离氨基酸含量,以及浸提液的色差值。结果表明,绿茶在酒精度45%vol的白酒中浸提50 min,料液比1∶20(g/mL)、1∶30(g/mL)和1∶40(g/mL)对应的总浸提率分别为29.29%、30.02%和32.19%;浸提液中茶多酚含量分别为9.72 mg/mL、6.43 mg/mL和5.07 mg/mL;浸提液中游离氨基酸含量分别为1.96 mg/mL、1.50 mg/mL和0.91 mg/mL;随着浸提时间延长,浸提液色差L^(*)值逐渐降低,a^(*)值和b^(*)值逐渐增大。绿茶在乙醇浓度为40%时总浸提率最大为29.93%;乙醇浓度为50%时浸提液中的茶多酚浓度最高为6.17 mg/mL;乙醇浓度为30%的浸提液中游离氨基酸浓度最大为1.53 mg/mL。结合产业分析,可以选择乙醇浓度50%左右的酒溶液浸提绿茶,料液比1∶30(g/mL),时间为50 min。In order to elucidate the extraction rule of green tea in the water-alcohol complex system,the total extraction rate,the contents of tea polyphenols and free amino acids in the extraction solution of 45%vol liquor and different ethanol concentrations,and the color difference of the extraction solution were studied with green tea fragments as the sample.The results showed that the total extraction rates of green tea were 29.29%,30.02%and 32.19%,respectively,when the solid-liquid ratio was 1∶20(g/mL),1∶30(g/mL)and 1∶40(g/mL)in 45%vol liquor for 50 min.The contents of tea polyphenols in the extract were 9.72 mg/mL,6.43 mg/mL and 5.07 mg/mL,respectively.The contents of free amino acids in the extract were 1.96 mg/mL,1.50 mg/mL and 0.91 mg/mL,respectively.With the extension of the extraction time,the color difference L^(*)value gradually decreased,and the a^(*)value and b^(*)value gradually increased.The maximum extraction rate of green tea was 29.93%when the ethanol concentration was 40%.The highest concentration of tea polyphenols in the extract was 6.17 mg/mL when the concentration of ethanol was 50%.The maximum concentration of free amino acids was 1.53 mg/mL when ethanol concentration was 30%.According to the comprehensive industry analysis,green tea can be extracted from wine solution with ethanol concentration of about 50%,the solid-liquid ratio is 1∶30(g/mL),and the time is 50 min.
