摘 要:内脏是鱼体中占比最大的一类副产物,在加工或烹饪前,都必须进行去脏处理,是最复杂、最耗时的一道工序。目前鱼类的去脏绝大多数依赖人工,存在处理效率低,环境脏乱、污染大等问题,急需研发新的去脏技术与装备。通过查阅大量的文献资料,对目前国内外鱼类去脏技术和装备的研究与应用现状进行了总结,对不同类型去脏技术和装备进行了对比分析,对鱼类去脏技术与装备的发展趋势进行了展望,旨在为鱼类去脏技术的发展及装备的研发提供理论依据和技术支撑。Entrails are the largest proportion of fish by-products.Before processing or cooking,dirty removement must be carried out,which is the most complex and time-consuming process.At present,most of fish decontamination depends on manual work,there are many problems,such as low efficiency,dirty environment and pollution,so it is urgent to develop new decontamination technology and equipment.By consulting a large amount of literature,this paper summarizes the current research and application of fish decontamination technology and equipment at home and abroad,and makes a comparative analysis of different types of decontamination technology and equipment,the development trend of fish decontamination technology and equipment is prospected in order to provide theoretical basis and technical support for the development of fish decontamination technology and equipment.
