摘  要:冲调性是影响奶粉感官品质的重要指标,越来越多的消费者将奶粉的冲调性作为奶粉品质的一项评价标准。本文选择13款市售婴幼儿配方奶粉,对其分散度、润湿时间、溶解度、表面成分组成、水分、粒径分布进行检测,并对数据进行主成分分析(Principal Component Analysis,PCA)和线性回归拟合,以解析婴幼儿配方奶粉冲调性的关键影响因素。最后选择分散度在80%以上和80%以下的粉体,通过扫描电子显微镜观察粉体颗粒大小及聚集情况。结果表明,冲调性主要受分散度影响,后者的关键影响因素为粉体粒径分布,其中144~272μm的粗颗粒体积占比与分散度呈现为最强的正相关,130μm以下的细颗粒体积占比与分散度呈现为负相关。此研究结果对改善婴幼儿奶粉的冲调性提供理论依据。Reconstituability is an important indicator of the sensory quality of milk powder since more and more consumers pay much attention to this indicator.Milk powder reconstitution is a process of recovering it from a granular state to an emulsion state,which is affected by various factors.Currently,there is still limited research regarding the key factors and their key data ranges.In this study,13 commercial infant formulas were selected and tested for dispersibility,wetting time,solubility,surface composition,moisture,and particle size distribution.The data were analyzed by Principal Component Analysis(PCA)and linear regression to reveal the key factors and their key data ranges influencing the reconstitution property of infant formulas.The results showed that the reconstitution was mainly affected by the dispersibility which was influenced by the particle size distribution of the powder.The volume ratio of particles between 144-272μm had a positive correlation with the dispersion,while the volume ratio of particles below 130μm had a negative correlation with the dispersion.The results of this study have important implications for improving the reconstitution property of infant formulas.
