摘  要:以松木屑、马铃薯淀粉和玉米粉为栽培配方原料,研究基质含氮量对广叶绣球菌产量和主要品质的影响。结果表明,在供试范围内,随着基质含氮量的增加,广叶绣球菌产量呈现逐渐上升的趋势;瓣片中蛋白质含量和氨基酸总量呈现“先上升后稳定”的趋势;基质含氮量对瓣片中部分氨基酸组成成分有显著影响;对总葡聚糖、β-葡聚糖、麦角甾醇含量的影响无显著性差异。由以上结果可知,提高基质含氮量可明显提高广叶绣球菌产量以及蛋白质和氨基酸含量,基质含氮量为0.37%时,产量高、品质好。The effects of nitrogen content of substrate on the yield and main quality of Sparassis latifolia were studied when the pine sawdust,potato flour and corn flour were used as the materials of medium formula.The results showed that as the propor-tion of nitrogen content of substrate increased,the fruit body yield of S.latifolia increased;the protein and total amino acid in the flabella initially increased and started to stable.The nitrogen content of substrate had significant effect on some amino acid components of flabella.While,there were no significant difference in the contents of total glucan,β-glucan and ergosterol.Ac-cording to the above results,the yield,the contents of protein and amino acid could significantly increase by increasing the con-tent of nitrogen in the substrate.When the nitrogen content of substrate was 0.37%,the yield was high and the quality was good.
