摘 要:通过比较4种配方制作的新窖泥在发酵驯化过程中的生化指标,阐述了新窖泥生化指标在发酵驯化过程中的变化趋势。研究发现:4种窖泥的水分呈波动式变化,在34%上下波动;腐殖质、氨态氮的变化规律趋于一致,呈急剧下降后再缓慢累积的趋势;在pH变化上,A、B窖泥的pH在演替阶段(第7发酵期)显著低于C、D窖泥;从窖泥生化指标变化趋势而言,A、B窖泥配方优于C、D窖泥配方。In this study,the biochemical indexes of new pit mud of four formulations during the process of fermentation and cultivation were compared,so as to find out the change trend of biochemical indexes of new pit mud in the process of fermentation and cultivation.The analysis found that,the moisture content of the four kinds of pit mud fluctuated around 34%;the changes of humus and ammonia nitrogen were similar,showing a trend of rapid decline and then slowly accumulating;the pH value of pit mud A and B was significantly lower than that of pit mud C and D in the succession stage(the 7th fermentation stage).In terms of the change trend of biochemical indexes,pit mud A and B were better than pit mud C and D.
