摘  要:目的:分析贵州省当前食品安全的整体情况,为制定有效的监督管理策略提供参考。方法:对2021年贵州省食品安全监督抽检结果进行汇总,分析抽检情况及存在的食品安全风险。结果:2021年全省共完成各类食品监督抽检62897批次,检出1071批次不合格食品,总不合格率为1.70%。抽检涵盖33个食品类别,其中不合格率前三依次是炒货食品及坚果制品(5.41%)、饮料(5.31%)和餐饮食品(4.08%)。炒货食品及坚果制品问题较为突出,不合格项目主要为过氧化值(以脂肪计)、酸价(以脂肪计)和霉菌。从抽检检出的不合格食品中发现,主要食品安全风险是微生物污染、农兽药残留和超范围、超限量使用食品添加剂。结论:2021年贵州省整体食品安全状况趋于良好,但也存在微生物污染、农兽药残留和超范围、超限量使用食品添加剂等食品安全风险,应加强对炒货食品及坚果制品、饮料和餐饮食品等的监督管理,此可作为下一年贵州省食品安全风险控制的基础。This paper analyzes the overall situation of food safety in Guizhou Province,and provides reference for the formulation of effective supervision and management strategies.The food safety supervision and sampling inspection results of Guizhou Province in 2021 are summarized,and the existing food safety risks are analyzed.In 2021,62897 batches of various kinds of food went through sampling inspection,of which 1071 batches were identified as unqualified,with a total unqualified rate of 1.70%.The sampling inspection covered 33 food categories,among which the categories with the highest unqualified rates were fried food and nut products(5.41%),beverages(5.31%)and catering food(4.08%).The problems of fried food and nut products were more prominent,and the unqualified items were peroxide value(based on fat),acid value(based on fat)and mold.It was found that the main food safety risks were microbial contamination,residues of pesticides and veterinary drugs,and excessive use of food additives.In 2021,the overall food safety situation in Guizhou Province was stable,but there were food safety risks such as microbial contamination,residues of pesticides and veterinary drugs,and excessive use of food additives.The supervision and management on fried food and nut products,beverages and catering food should be strengthened.This paper can serve as the basis of food safety risk control in Guizhou Province in the next year.
