摘  要:大肠菌群作为食品安全控制环节中重要指标之一,GB 4789.3—2016中提供了2种方法,分别为第一法(MPN法)与第二法(平板计数法),为研究不同类型样品最适宜的检测方法,将570份不同类型样本分别同时采用GB 4789.3—2016的第一法和第二法进行检测。结果表明,对于经过打磨、加热等破坏性生产加工的样品,第一法(MPN法)的检测灵敏度更高。对于未经打磨、加热等破坏性的样品,第一法(MPN法)与第二法(平板计数法)检测差异性不大。As one of the important indicators in food safety control,the coliform group provides two methods in GB 4789.3—2016,namely the first method(MPN method)and the second method(plate counting method).To study the most suitable detection method for different types of samples,570 samples of different types were simultaneously tested using GB 4789.3—2016 the first and second methods were tested,and the research results showed that the first method(MPN method)had higher detection sensitivity for samples subjected to destructive production processes such as polishing and heating.For samples that have not been polished,heated,or damaged,the difference between the first method(MPN method)and the second method(plate counting method)was not significant.
