摘　　要：丢糟是中国白酒生产中典型的有机固体废弃物,其数量巨大,营养物质丰富,实现酿酒丢糟的资源化利用对白酒行业有重要的发展意义。本文系统阐述了近年来丢糟的资源化利用方式,包含有机肥料、清洁燃料、蛋白发泡剂以及提取类黑精、多肽、醇溶蛋白等,为白酒产业链副产物的多元化、生态化利用途径提供了参考。Distillers grains are fermentation by-products of traditional Baijiu production process,which are huge in quantity and rich in nutrients.This paper systematically elaborates on the resourcezation methods of distillers grains in recent years,including organic fertilizer,clean fuel,protein foaming agent,and the extraction of melanoid,polypeptide,prolamin,etc.,so as to provide reference for the diversified utilization of by-products of Baijiu industry.
