摘　　要：微生物传感器是一类特殊的传感器,可用于检测食品中微生物的存在和数量。本文介绍了微生物传感器的类型,详细阐述了微生物传感器在食品分析中的优势,接着探讨了微生物传感器在食品分析中的具体应用,包括检测食品中常见微生物污染的类型和来源、实时监测食品加工过程中的微生物污染,以及检测食品存储和运输过程中的微生物变化,并展望了微生物传感器的未来发展方向,旨在呼吁加强科研与技术创新,推动微生物传感器在食品安全管理中的更广泛应用,以保障食品安全与公众健康。Microbial sensors are a special class of sensors used to detect the presence and quantity of microorganisms in food.This paper introduces the types of microbial sensors,elaborates the advantages of microbial sensors in food analysis,and then discusses the specific applications of microbial sensors in food analysis,including detecting the types and sources of common microbial contamination in food,real-time monitoring of microbial contamination in food processing,and the detection of microbial changes in the process of food storage and transportation.This paper looked forward to the future development direction of microbial sensors,aiming to call for strengthening scientific research and technological innovation,promote the wider application of microbial sensors in food safety management,in order to ensure food safety and public health.
