摘　　要：堇叶碎米荠作为野生转家种植物和高聚硒蔬菜品种,富含蛋白质、多糖、脂肪酸、总硒及有机硒等生物活性物质,具有较高的营养保健价值,其作为膳食补硒原料可利用开发富硒功能产品,具有可观的社会效益和经济效益。综合分析探讨了富硒蔬菜堇叶碎米荠营养保健成分、功效作用及其硒产品开发潜力,对富硒堇叶碎米荠产业发展进行了展望。As a wild plant and a high selenium vegetable variety,Cardamine circaeoides contains high bioactive substances such as protein,polysaccharide,fatty acid,total selenium and organic selenium,and has high nutritional and health care value.As a dietary selenium supplement raw material,Cardamine circaeoides can be used to develop rich-selenium functional products,which has significant social and economic benefits.This paper comprehensively analyzed and discussed the nutritional and health components,efficacy and selenium product development potential of rich-selenium vegetable Cardamine circaeoides and looked forward to the development of its industry.
