摘 要:【目的】为探究外源褪黑素对晾制过程中雪茄烟叶膜脂过氧化作用的影响,改善雪茄烟叶质量。【方法】以德雪1号为试验材料,设置0、60、120、180μg/mL共4个外源褪黑素处理,研究不同褪黑素处理对晾制过程中雪茄烟叶水分含量、化学成分、丙二醛(MDA)、脯氨酸、多酚类物质含量及抗氧化酶活性的影响。【结果】(1)晾制过程中雪茄烟叶膜脂过氧化水平升高,MDA含量持续上升。(2)外源褪黑素处理可降低雪茄烟叶MDA含量,提高烟叶脯氨酸、水分和多酚类物质含量,增加过氧化物酶、超氧化物歧化酶、过氧化氢酶和多酚氧化酶活性。(3)相同的晾制时期,以120μg/mL外源褪黑素处理抗氧化效果最佳,多酚类物质降解较完全,化学成分最协调,且感官质量较好。【结论】选用适宜浓度的外源褪黑素有利于降低晾制期间雪茄烟叶的膜脂过氧化水平,促进烟叶内在成分的转化,提高烟叶的品质。This study aims to explore the effect of exogenous melatonin(MT)on membrane lipid peroxidation level of cigar tobacco leaves during air-curing stage and improve the quality of cigar tobacco leaves.Taking Dexue No.1 as the test material,experiments were conducted to study the moisture content,chemical composition,MDA,proline,polyphenols content and antioxidant enzyme activities of cigar tobacco leaves under different MT levels of 0,60,120,and 180μg/mL.The results showed that the level of membrane lipid peroxidation in cigar leaves increased,the content of MDA was increased during air-curing stage.Under the exogenous melatonin treatments,the content of MDA of cigar leaves were decreased,the content of proline,moisture and polyphenols were increased,and the activities of peroxidase(POD),superoxide dismutase(SOD),catalase(CAT)and polyphenol oxidase(PPO)were increased.In the same air-curing period,the treatment of 120μg/mL MT had the best antioxidant effect,the polyphenols were degraded more completely,the chemical composition was the most coordinated,and the sensory quality was good.Therefore,application of appropriate concentration of exogenous melatonin can reduce the level of membrane lipid peroxidation,promote conversion of intrinsic ingredients,and improve the quality of cigar tobacco leaves during air-curing stage.
