摘 要:以北极甜虾虾壳为对象,研究从北极甜虾虾壳中提取多肽的工艺。通过单一实验因素实验,得到:酶浓度为10%、酶解时间为40 min、酶解温度为50℃、pH=4时多肽产率和水解度均最高。通过四因素三水平的正交试验得出最优工艺条件,即酶解时间为40 min、酶浓度为12.5%、酶解pH为4、酶解温度为50℃。该工艺可为有壳类海产废物制备活性肽积累更多的经验,为其实现工业化、实现废弃物有效利用提供有力支持。The technology of extracting polypeptide from the shell of Arctic sweet shrimp was studied.Through a single experimental factor experiment,it was finally obtained that the peptide yield and degree of hydrolysis were the highest when the enzyme concentration was 10%,the enzymatic hydrolysis time was 40 min,the enzymatic hydrolysis temperature was 50℃,and pH=4.Through the orthogonal test of four factors and three levels,the optimal technological conditions were obtained.Result showed the optimal technological conditions for the preparation of peptides were as follows:enzymatic hydrolysis time was 40 min,enzyme concentration was 12.5%,enzymatic hydrolysis pH was 4,and enzymatic hydrolysis temperature was 50℃.This process can accumulate more experience for the preparation of active peptides from shelled marine waste,and provide strong support for its industrialization and effective utilization of waste.
