摘　　要：双歧杆菌广泛应用于益生菌发酵乳制品生产。本研究从广西巴马地区长寿老人肠道内定相分离得到一株乳双歧杆菌IU-100(IU-100),并对其进行了安全性和耐受性评价,以期了解乳双歧杆菌IU-100是否具有潜在的安全问题。结果显示,IU-100对多种抗生素的敏感程度不同,未出现种属保守耐性以外的抗生素耐受性,耐性的转移风险低;并且IU-100在培养过程中不产生生物胺类物质。灌胃不同剂量的IU-100也未对小鼠的血常规和生化指标产生显著影响,无细菌移位现象发生。在耐受性评价中,IU-100展现了较良好的耐酸性、耐胆汁性。本研究结果表明,IU-100安全性较高,耐受性良好,具有成为优良益生菌的潜质,可应用于发酵乳制品等产品中,为促进我国现代奶业发展提供优良菌种资源。Bifidobacterium is widely used in probiotic fermented dairy products.In this study,the safety and tolerance of a strain of Bifidobacterium animalis IU-100(IU-100)isolated from intestinal tract of long-lived elderly people in Bama of Guangxi were evaluated,in order to understand whether it has potential safety problems.The results showed that the sensitivities of IU-100 to a variety of antibiotics were different,and it did not show the antibiotic tolerance other than the conserved tolerance of species,which indicated that the strain had the low risk of antibiotic tolerance transfer.Moreover,IU-100 did not produce biogenic amines.The blood routine and biochemical indexes of mice were not significantly affected after different doses of IU-100 intragastric administration,and no bacterial translocation occurred.In the tolerance evaluation,IU-100 showed good resistance to acid and bile.These results showed that IU-100 was safe and well tolerated,suggesting IU-100 has the potential to be an excellent probiotic.Moreover,IU-100 can be used in fermented dairy products and provide excellent strain resources for promoting the development of modern dairy industry in China.
