摘 要:氨基葡萄糖盐酸盐(GAH)为甲壳素的下游产物之一。随着研究的深入,其主要活性成分葡萄糖胺(GlcN)从单一的通过虾蟹壳的化学水解获得逐渐发展到可从真菌、细菌等多种原料获得。GlcN具有治疗骨骼疾病、舒缓炎症、抗肿瘤等功效,可通过盐酸水解、酶解、发酵等方式制取。基于此,本文对现有国内外关于GlcN的生物活性及相关研究进行综述,以期对未来GlcN和GAH的进一步开发提供参考。Glucosamine hydrochloride(GAH)is one of the downstream products of chitin.With the deepening of research,its main active component,glucosamine(GlcN),has gradually developed from a single chemical hydrolysis of shrimp and crab shells to a variety of raw materials such as fungi and bacteria.GlcN has the effects of treating bone diseases,relieving inflammation,and anti-tumor.It can be produced by hydrochloric acid hydrolysis,enzymatic hydrolysis,and fermentation.Based on this,this article reviews the biological activity and related research of GlcN both domestically and internationally,in order to provide reference for further development of GlcN and GAH application fields in the future.
