摘 要:公用餐具能阻隔疾病传播,保障饮食安全。在国家倡导使用公用餐具的背景下,针对食客对公用餐具的使用习惯及商家的利益需求,构建基于KANO模型和五感理论的公用餐具设计流程,寻找公用餐具的利益相关者对公用餐具需求与偏好,优化公用餐具的配置与使用率。首先,通过问卷和访谈获取利益相关者(食客、餐厅管理者与服务人员)的需求词汇。其次,使用KANO模型进行利益相关者需求分析,获得利益相关者理性需求重要性排序。再利用五感理论进行利益相关者感性偏好和交互形式分析,将两者整合为设计机会点、形成设计方案。最后,利用设计评估选出最佳设计方案。结果表明,将KANO模型和五感理论结合使用可以有效分析利益相关者需求,优化利益相关者使用体验,为公用餐具设计提供参考。Public tableware can block the transmission of diseases and ensure food safety.Under the background of the state advocating the use of public tableware,according to the habits of diners and the interests of merchants,a design process for public tableware based on the KANO model and the theory of five senses was constructed,and the stakeholders of the public tableware were found to optimize the configuration and utilization rate of the public tableware.First,acquire the vocabulary of stakeholders'needs through questionnaires and interviews.Secondly,the KANO model is used to analyze the needs of stakeholders(diners,restaurant managers,and service personnel)to obtain the importance ranking of stakeholders'rational needs.Then,the five senses theory is used to analyze the perceptual preference and interaction form of stakeholders and integrate the two into design opportunities and form design schemes.Finally,the design evaluation is used to select the best design solution.The results show that the combination of KANO model and five-senses theory can effectively analyze the needs of stakeholders,optimize their experiences,and provide a reference for the design of public tableware.
