摘  要:本研究采用酯交换法前处理7种甘肃产功能性植物油,并使用气相色谱质谱联用仪进行了检测。结果表明,7种甘肃产功能性植物油中各脂肪酸含量在0.01%~81.86%,7种植物油中含量最高的脂肪酸均为油酸、亚油酸和亚麻酸,除橄榄油外,其他植物油中不饱和脂肪酸含量均高于90%。This study used ester exchange method to pretreat 7 functional vegetable oils produced in Gansu,and detected them using gas chromatography-mass spectrometry.The results showed that the content of various fatty acids in seven functional plant oils produced in Gansu ranged from 0.01%to 81.86%.The highest content of fatty acids in the seven plant oils were oleic acid,linoleic acid,and linolenic acid.Except for olive oil,the content of unsaturated fatty acids in other plant oils was higher than 90%.
