摘 要:目的:通过调查食物中毒的原因及可能的危险因素,提出针对性的改进措施,为今后防控类似食源性疾病的发生提供参考。方法:采用现场流行病学调查和描述性流行病学分析,通过病例对照研究,确定本次食物中毒的可疑危险食物;采集餐厅剩余食物、病人粪便、呕吐物以及餐厅环境样本进行病原学、微生物学和其他实验室检查。结果:现场共发现病例54人,罹患率11.4%。发病潜伏期最短4 h,最长21 h,平均潜伏期中位数为10 h,流行病学曲线提示发病时间分布呈点源传播模式。凉拌猪肝(OR=3.70,95%CI=1.67~8.21)和夫妻肺片(OR=3.95,95%CI=1.57~9.98)食用后发病风险显著高于未进食的发病风险。采集病例合格标本39份,其中8份标本检出鼠伤寒沙门氏菌;采集菜品标本11份,其中3份菜品检出鼠伤寒沙门氏菌阳性。结论:本次食物中毒由鼠伤寒沙门氏菌交叉污染引起。Objective:Investigate the causes and risk factors of food poisoning together,propose targeted improvement measures,and provide a reference for preventing similar incidents.Method:Use on-site epidemiological survey and descriptive epidemiological analysis to establish a hypothetical hypothesis;use on-site questionnaire surveys to determine the suspicious dangerous food of the food poisoning through case comparison.Collect leftover food from the restaurant,patient feces,vomit,and environmental samples for pathogenic,microbiological,and other laboratory tests.Result:A total of 54 cases were found on the spot,and the attack rate was 11.4%.The shortest incubation period is 4 h,up to 21 h,and the average incubation period is 10 h.The epidemiological curve indicates that the onset time is distributed in the point source transmission mode.The risk of eating cold pork liver(OR=3.70,95%CI=1.67~8.21)and couple lung(OR=3.95,95%CI=1.57~9.98)is significantly higher than the risk of incompleteness.There are 39 patient’s samples and 11 pieces of food,Salmonella typhimurium was detected from 8 pieces of patient’s samples and 3 pieces of food.Conclusion:This is a food poisoning caused by cross-pollution caused by Salmonella typhimurium.
