摘  要:研制出一种百香果仙草饮料的配方.以百香果、仙草为原料,白砂糖为配料,通过单因素试验和正交试验以及电子鼻分析,对百香果仙草饮料的配方进行研究并优化.结果表明,制得的一种百香果仙草饮料的最优配方为百香果汁添加量为15%,仙草汁添加量为30%,白砂糖添加量为7%,黄原胶添加量为0.03%.得到的百香果仙草饮料酸甜可口,风味良好.A formula of the Mixed Juice Beverage of Passion Fruit & Grass Jelly was developed.Using passion fruit and grass jelly as raw materials and white sugar as ingredients,the formula of the mixture of passion fruit and grass jelly was studied and optimized through single factor experiment,orthogonal experiment and electronic nose analysis.The results show that the optimal formula of a mixed juice of passion fruit and grass jelly is 15% passion fruit juice,30% grass jelly juice,7% white sugar and 0.03% xanthan gum.The obtained drink is delicious in flavor in sweet and sour.
