摘　　要：为提高时间-温度指示器(Time-temperature indicator,TTI)在肉类食品品质监测中的应用,综述了各类TTI的概念、分类、优缺点,以及在肉类食品包装中应用进展。探讨了针对不同肉类食品中的具体案例,分析影响不同类型的TTI在肉类食品包装中的应用前景。大量国内外文献表明,TTI可以用来监测肉类食品在贮藏运输中温度历史的有效工具,可用来降低肉类食品的腐败问题,减少经济损失,具有良好的发展前景。In order to improve the application of time-temperature indicator(TTI)in meat quality monitoring,the concept,classification,advantages and disadvantages of TTI and its application in meat packaging were summarized.This paper discussed the specific cases of different meat foods and analyzed the application prospect of different types of TTI in meat packaging.A large number of domestic and foreign literature proved that TTI could be used as an effective tool to monitor the temperature history of meat product during storage and transportation,and could be used to reduce the rot of meat and reduce economic losses,which had a good development prospect.
