摘  要:籽叶两用茶树是在新型栽培模式下形成的春夏季采叶秋冬季采果。茶叶经鉴定的化合物有700多种,根据加工方法不同和品质上差异,可制成绿茶、红茶、乌龙茶、黑茶、白茶和黄茶等六大基本茶类。茶树成熟的果实即茶叶籽,茶叶籽作为新型茶树资源有广泛的用途。茶叶籽富含油脂,其中不饱和脂肪酸含量较高,可以作为药食两用的保健油加以开发。综述了近年来国内外有关籽叶两用茶树的茶叶及茶叶籽的营养成分和加工技术的研究,以期为我国实现茶产品的深加工提供参考。Tea tree with seed-leaf double harvest is a kind of tea plant formed under the new cultivated model,of which the leaf could be harvested in spring and summer and the fruits could be harvested in autumn and winter.Totally,about 700 compounds were identified in the tea leaf.It could be divided into several categories based on different processing method and quality such as green tea,black tea,oolong tea,dark tea,white tea,and yellow tea.The tea seed was from the mature fruit of tea tree,which was widely used as a new resource.The tea seeds were rich in unsaturated fatty acids so that could be developed as a health oil source for both food and medicine.In the present review,we summarized the domestic and foreign studies on the tea with seed leaf double harvest,the nutrition components,and the process technology.It would provide the reference for the deep processing of tea products in China.
