一种益生元复合固体饮料配方及通便功能研究

摘　　要：以圆苞车前子壳粉、低聚木糖、菊粉、低聚异麦芽糖、低聚果糖、沙棘粉、血橙粉、柠檬粉、黑果腺肋花楸果粉、维生素C、三氯蔗糖为原料,采用单因素和正交试验,并结合模糊数学感官评价法,优化并确认一款益生元复合固体饮料配方,并开展产品的通便功能研究。结果表明,益生元复合固体饮料产品最佳配方为:圆苞车前子壳粉20.0%、血橙粉15%、柠檬粉0.5%、黑果腺肋花楸果粉7.0%、沙棘粉5.5%、菊粉2.0%、低聚木糖10.0%、低聚果糖7.5%、低聚异麦芽糖19.4%、维生素C 2.0%、三氯蔗糖0.15%、抗性糊精13.7%。该配方下冲调的饮品,口感细腻,酸甜适中,色泽、口感和风味均为最佳。小鼠试验研究结果显示,益生元复合固体饮料低、高剂量组均能显著(P<0.05)增加小肠运动、缩短首便时间、增加粪便粒数和粪便质量,产品具有良好通便功能。In this study,the formula of prebiotic compound solid drink was optimized and confirmed by single factor and orthogonal tests,combined with fuzzy mathematical sensory evaluation method,using the powder of Plantago rotundifolia,resistant dextrin,xylooligosaccharide,inulin,oligo isomaltose,fructooligosaccharide,seabuckthorn powder,blood orange powder,lemon powder,Sorbus nigrica fruit powder,vitamin C,and sucralose as raw materials,and further carrying out the study on the laxative function of the product.The results showed that the best formula of prebiotic compound solid beverage product was:Plantago rotundifolia seed shell powder 20.0%,blood orange powder 15%,lemon powder 0.5%,Sorbus nigrica fruit powder 7.0%,seabuckthorn powder 5.5%,inulin 2.0%,xylooligosaccharide 10.0%,fructooligosaccharide 7.5%,oligo isomaltose 19.4%,vitamin C 2.0%,sucralose 0.15%,and resistant paste 13.7%.The beverage prepared with this formula has a delicate taste,moderate acidity and sweetness,and the best color,taste,and flavor.The results of mouse experiments showed that both the low and high dose groups of prebiotic composite solid drinks could significantly(P<0.05)increase intestinal motility,shorten first bowel movement time,increase fecal particle count and weight,and the product had good laxative function.
