摘　　要：阐释了蒸汽爆破设备装置及其工作原理,分析了蒸汽爆破技术的影响因素及其优缺点,综述了蒸汽爆破技术在生物活性成分提取和大分子物质改性中的应用,以期为蒸汽爆破技术的推广应用提供参考。Steam explosion equipment and its working principle were explained.The influencing factors and advantages and disadvantages of steam explosion technology were analyzed.The application of steam explosion technology in the extraction of biological active ingredients and modification of macromolecular substances were summarized,in order to provide reference for the promotion and application of steam ex-plosion technology.
