摘  要:目的:确定番茄皮中总膳食纤维的最佳提取条件。方法:以总膳食纤维提取率为考察指标,通过单因素和正交试验探究H_(2)SO_(4)溶液浓度、H_(2)SO_(4)溶液提取时间、NaOH溶液浓度、NaOH溶液提取时间等对提取率的影响。结果:最佳提取条件为H_(2)SO_(4)溶液浓度1.50%、干燥番茄皮与H_(2)SO_(4)溶液的料液比1∶20(g∶m L)、H_(2)SO_(4)溶液提取时间40 min、NaOH溶液浓度2.25%、干燥番茄皮与NaOH溶液的料液比1∶25(g∶mL)、NaOH溶液提取时间40 min,该条件下番茄皮渣中膳食纤维提取率达25.50%。结论:优化得到的总膳食纤维提取工艺稳定可行。Objective:To determine the optimal extraction conditions of total dietary fiber from tomato peel.Method:Using the extraction rate of total dietary fiber as the evaluation index,the effects of H_(2)SO_(4)solution concentration,H_(2)SO_(4)solution extraction time,NaOH solution concentration,and NaOH solution extraction time on the extraction rate were investigated through single factor and orthogonal experiments.Result:The optimal extraction conditions are 1.50%H_(2)SO_(4)solution concentration,1∶20(g∶mL)solid-liquid ratio of dried tomato skin to H_(2)SO_(4)solution,40 minutes of H_(2)SO_(4)solution extraction time,2.25%NaOH solution concentration,1∶25(g∶mL)solid-liquid ratio of dried tomato skin to NaOH solution,and 40 minutes of NaOH solution extraction time.Under these conditions,the extraction rate of dietary fiber from tomato skin residue reaches 25.50%.Conclusion:The optimized extraction process for total dietary fiber is stable and feasible.
